1. Would you expect to see granulation and detail on the sun visually, see photo 2, NOT mine.
2. If so what am I doing wrong as all I ever see is a plain sun no detail

Have you been able to get a focused image of the limbo of the Sun ?
I think you have problems with the correct distance of focusing.

Nice setup! You're not going to get views like in the picture, that's a heavily manipulated composite image, but, also, fundamentally we are in the depths of solar minimum, with the sun being essentially devoid of all features and prominences. Take a look at todays current image - diddly squat!
You will have to wait a till later this year, maybe early next until start seeing features like in the picture.

As Rainer says, try first to get a sharp limb focussing on it, then you can try to get some detail on the chromosphere.

¿ did you photograph your empty breakfast plate ? When I was living in Germany and visiting UK, selling Textile Machinery, twice a year I always enjoyed your full English Breakfast as a good starter for the day

That all looks set up correctly to me. Of course, as others have said there are no features of significance to view on the sun and you would never see granulation in the Sun’s chromosphere, only in the photosphere with white light.
I’ve only used a quark a few times but to be honest I have never gotten any details either in the full disc view. Maybe try a 2.5x powermate?
